  • 1 cup fat-free or 1% milk
  • 2-1/2 tablespoons sugar

Yields about 12 cupcakes

Ingredients:

For the cupcakes:

  • 2 cups sifted all-purpose flour
  • 1 cup white sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup unsweetened applesauce
  • 1/4 cup canola oil
  • 1-1/2 cups water
  • 1-1/2 teaspoons baking soda
  • Dash of salt
  • 1 tablespoon vanilla extract

For the frosting:

  • 2 tablespoons butter, soft
  • 4 ounces light cream cheese
  • 1-1/2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1-1/2 tablespoons light cream
  • 1/2 teaspoon vanilla

Directions:

  • To make the cupcakes: Preheat oven to 350 degrees F. Grease cupcake/muffin tin with cooking spray. In a large bowl, mix flour, baking soda, cocoa powder and salt together. Add in sugar and mix well. Add in water, oil and vanilla and mix until batter is creamy. Pour batter into the greased cupcake pan, filling each about 3/4 full. Bake for 35-45 minutes or until they are fully cooked. Poke with a toothpick and if it comes out dry, they are done. Put on a wire cooling rack and let cool before frosting.
  • To make the frosting: Beat the cream cheese, butter, powdered sugar, light cream, cocoa powder and vanilla together with an electric mixer. Beat until thick and creamy. Frost cupcakes with frosting and garnish with chocolate shavings.
